Carrot Cake Protein Balls Recipe

I am a BIG fan of easy to follow, easy to cook/bake/make recipes because the kitchen and I are not yet friends. And, my cooking skills leave a lot to be desired. So when I found this carrot cake protein balls recipe I was beyond excited. I had been craving fall flavors - pumpkin, carrots, apples, cinnamon nutmeg - and this recipe was just what I needed to avoid the unhealthy options I love (apple pie, apple cinnamon donuts, pumpkin muffins, pumpkin donuts and the list goes on and on and on). 

To be honest - they tasted even better than I thought they would! Even my boyfriend went back for more #SUCCESS

The below recipe takes about 20 - 30 min. I have a pretty small food processor so it took me a bit to blend all the ingredients into dough - something to keep in mind. My boyfriend suggested adding some honey for a touch more sweetness, so I think next time I am going to give that a try!
